They came about during the Depression, when it was common to use fillers to extend the meat over a couple meals. At the time, "slug" was slang for a nickel, which was what the burger was sold for. The noble slugburger is native to Corinth, but has reached throughout northern MS and western TN.

My family used to get slugburgers all the time from that little trailer that used to sit next to the high school.
What are slugburgers made from? Soy? Chickpea? I honestly don't know.
But man were they fine on a white bun with mustard.
